PIZZA PIZZA!! Remember those funny Little Caesars commercials?

I think Pizza if one of those things you can change up to create new flavors. From BBQ chicken, to Taco to eggs.  Of course you cannot go wrong with a good ole’ pepperoni.  Eggs pizza is definitely nothing new, but something even I forget to make.  It is so simple, actually pizza is very simple.

Mini Chocolate Bundt Cakes

These are the cutest little cakes my eyes have ever laid eyes on, I just may have found my newest way to treat my friends and family.  I bought this pan at a garage sale but never used it, I am a sucker for anything baking.  You can buy similar ones like this, or this, or this, depends on how much you want to spend.  Or just check out your local garage sales this upcoming spring and score an ultra cheap one like I did, probably only spend $1.00. Either way you are sure to bake up some delightful goodies!

Now onto the actual chocolate bundt recipe.  Its simple, yet absolutely delicious chocolate cake and the added ganache is so smooth.  Do not be afraid of the added coffee in the cake coffee really does intensify the chocolate flavor!  

A simple shortcut that I make with two of the ingredients in this recipe is DIY cake flour and buttermilk.  

For the cake flour: using your 1 cup measuring cup, add 2 tablespoons of cornstarch, then fill the rest of the 1 cup with flour.  

For Buttermilk: using your 1/2 cup measuring cup, add 1 tablespoons of vinegar, then fill the rest of the 1 cup with milk, let sit for 5-10 minutes.  

Whola your homemade, and cheap DIY cake flour and buttermilk!

Oreo Chocolate Cupcakes

Personally you can never go wrong with OREO’s.  There is something simply magical about the chocolate sandwich cookie with the cream center.  How do you eat yours?  As I kid, I definitely dunked it until it was soaked…like just before mushy soaked.  Then it almost melted in my mouth.  In my teen years, I liked to twist, lick the cream filling and then eat the chocolate cookies last.  Now as an adult I just eat it whole, and with a side of almond milk.

So I loved when my youngest son picked out these cupcakes for his birthday party.  They are great pair of chocolate cupcake with vanilla oreo frosting.

Mom’s Rhubarb Bars

These rhubarb bars have been a summer treat my entire life.  I don’t remember a summer without them, and it would not be a summer without them.  The crunchy sweet topping, paired with the tart rhubarb filling and ending with another sweet crunch.  I have no clue where the recipe originates from, other than that of my grandmother’s recipe box.  So if you are fortunate to have frozen enough rhubarb to create this sweet summer treat in the winter, you are LUCKY!

My mother-in-law said she used to eat rhubarb by the stalk but with sprinkled sugar on top.  So is rhubarb a fruit or a vegetable?  Well after some reading, rhubarb is a vegetable but mainly cooked down with sugar such as a fruit would be.  Rhubarb is a very tart vegetable, which is why most recipes have sugar added.

Another New Year…time goes by

I promise too:

I am not a New Year’s Resolution kind of person, actually I do not think I have ever made a New Year’s resolution.  I find them kind of silly sometimes, because most of the time I read or hear about these over the top unattainable resolutions.  But this year either I have a different mindset, a clearer vision or I have been reading too much BUT I want to make three simple resolutions. Although, I do not want to call them resolutions because this sounds cliche. I want to make them promises to myself.  These promises I have wanted to do for a long time, but have never just done it or started but not finished.   Sometimes in order to do something you need to write it down, have a vision, create the goal and do it.  Really I have just never made them a priority.  So in no particular order here are the three promises to myself:

  1.  Make my mom’s recipes and create a cookbook for my family of them
  2. Log every mile I run in my lovely planner(which will be here Wednesday..THANK YOU Amazon PRIME:)
  3. Blog one time per week.

Each one of these has their meaning to me and I can’t wait to get started.

Cookie Monster Cake

My husband just might be the human cookie monster, for his love of anything sweet but especially homemade chocolate chip cookies.  So when this commercial came out, he laughed, watched and then said “I love cookie monster”.   This commercial is adorable but it is totally my hubby when waiting for the cookie—IMPATIENT! So for his love of Cookie Monster, love of chocolate chip cookie, love of cake, love of sweets: this cake is just for him.

Don’t be alarmed by the ingredient list.  It is actually quite simple to put together.

  1. make the cake and let it cool

  2. make the cookies dough frosting, assemble the cake, put in refriderator.

  3. make cookies and cream frosting, frost entire cake

  4. make ganache, pour over cake

  5. make eyes

  6. ENJOY, because it is a delicious cake:)

Ham and Cheese Sliders

Ohh look at the melted cheese, and toasted bun!! These sandwiches are a family favorite!  The swiss cheese, salty ham and a wonderful mustard/mayo sauce makes these a go-to lunch or supper anytime of the year.

Ham is something we always have an abundance of in our freezer.  Our hockey association has a ham fundraiser every fall, one ham is about 15-17 lbs. spiral cut and pre-cooked for $45.00.  I typically buy two, one to freeze and save for Easter, the other I will cut up and refreeze in gallon ziploc bags.
