Mini Chocolate Bundt Cakes

img_1912.jpg

These are the cutest little cakes my eyes have ever laid eyes on, I just may have found my newest way to treat my friends and family.  I bought this pan at a garage sale but never used it, I am a sucker for anything baking.  You can buy similar ones like this, or this, or this, depends on how much you want to spend.  Or just check out your local garage sales this upcoming spring and score an ultra cheap one like I did, probably only spend $1.00. Either way you are sure to bake up some delightful goodies!

Now onto the actual chocolate bundt recipe.  Its simple, yet absolutely delicious chocolate cake and the added ganache is so smooth.  Do not be afraid of the added coffee in the cake coffee really does intensify the chocolate flavor!

A simple shortcut that I make with two of the ingredients in this recipe is DIY cake flour and buttermilk.

For the cake flour: using your 1 cup measuring cup, add 2 tablespoons of cornstarch, then fill the rest of the 1 cup with flour.

For Buttermilk: using your 1/2 cup measuring cup, add 1 tablespoons of vinegar, then fill the rest of the 1 cup with milk, let sit for 5-10 minutes.

Whola your homemade, and cheap DIY cake flour and buttermilk!

Yellow cupcakes with chocolate frosting

baseballyellowcupcakes1

Yellow cupcakes are by far my most favorite cupcake.  As a kid I did not like chocolate cupcakes or chocolate cake, they had a weird taste to me.  So many times I would not eat the cake at birthday parties or events because of this.  I blamed it on that I didn’t like cake but in reality I did not like chocolate cake. I was always on cloud nine when a party had a yellow cake or cupcake, the taste was just more sweet to me.  Even though I have grown out of my not liking chocolate cake, I still prefer a yellow cake over any other.

So I paired this amazing, yummy basic yellow cupcake with a rich creamy, smooth chocolate frosting.  These particular cupcakes were for my youngest sons birthday party, I always seem to have a baseball theme for him.  The baseball looking thing on top is 1/2 of a carefully cut oreo and red gel to make the stripes.

Oreo Chocolate Cupcakes

Personally you can never go wrong with OREO’s.  There is something simply magical about the chocolate sandwich cookie with the cream center.  How do you eat yours?  As I kid, I definitely dunked it until it was soaked…like just before mushy soaked.  Then it almost melted in my mouth.  In my teen years, I liked to twist, lick the cream filling and then eat the chocolate cookies last.  Now as an adult I just eat it whole, and with a side of almond milk.

So I loved when my youngest son picked out these cupcakes for his birthday party.  They are great pair of chocolate cupcake with vanilla oreo frosting.

Birthday Banner

When you can’t find EXACTLY what you are looking for you create it yourself, RIGHT.  I created exactly what I wanted, again using PICMONKEY.   I printed them out on regular 8.5 x 11 copy paper.  Cut out the black triangle and you have a perfect shaped banner.  I paired these up with DIY tassel garland out of plastic tablecloths to create a fun festive banner for a super special birthday lady at work:)

Stay tuned for the tutorial on plastic table cloth tassel garland…hint hint this was practice for my sons graduation party decorations.

My husband just might be the human cookie monster, for his love of anything sweet but especially homemade chocolate chip cookies.  So when this commercial came out, he laughed, watched and then said “I love cookie monster”.   This commercial is adorable but it is totally my hubby when waiting for the cookie—IMPATIENT! So for his love of Cookie Monster, love of chocolate chip cookie, love of cake, love of sweets: this cake is just for him.

Girl on a mission-Barn wood picture frame

girlonamission2

My youngest son has a birthday twin with an awesome young lady, April 15th.  The two are 6 years apart BUT the best of buddies. Their friendship has grown over the last 4 years because their older brothers are friends and have played varsity baseball togethers since they were freshmen.   The two look for each other at each and every game, and it is not the same if she is not able to be there.  Kaitibug (nickname from her parents), is a tomboy with a sweet, caring, outgoing personality.   Their friendship is unique and warms my heart.  She is an amazing young lady and could ask for a better role model for my son.

So since baseball season is a busy time of year, we have made their birthday special by celebrating at a game with each other and then sharing treats with the team.  Over the last four years they have bought something for each other, typically with a baseball theme.  I was struggling this year on what to get her.  Until she did something amazing, she played guitar and sang a self written song to her 6th grade bandmates.  I was fortunate enough to watch her do this and was blown away.  To tears actually, and I do not cry easy.  Afterward I snapped a few pictures of her, lying to her that they were for her mom.  So when I came across a GIRL ON A MISSION, I knew what I needed to do with the pictures.

Celebrating Dr. Seuss’s Birthday Day

IMG_2404

Love those dress up days for my elementary kiddos, especially Dr. Seuss birthday.  Our elementary school goes all out, the  kids and staff dress up, decorating the halls, and of course reading the fun silly Dr. Seuss books .  Of course for me it turns into a DIY project with the kids, searching the house for what we have before we head to the store.  The kids decided on their own what characters they would like to be.  My second grade girl has been Cindy LooHoo and Daisy Head Maisy, this year she settled on Sally Sue from Cat in the Hat.  My youngest who is in Kindergarten has seen this big sister costumes the last two years so I was super excited when he wanted to partake.  At first discussion we thought they would be a couple and he could go as the boy from Cat in the Hat, but he decided on his own to be Sam I am from Green Eggs and Ham

The only out-of-pocket expense for us was the blue tank top for Sally’s dress, 3.89 at Wal-Mart.  Otherwise all else was used from old t-shirts and fabric scraps from my craft stash.  I used several site to pull it all together.
