Mini Chocolate Bundt Cakes




These are the cutest little cakes my eyes have ever laid eyes on, I just may have found my newest way to treat my friends and family.  I bought this pan at a garage sale but never used it, I am a sucker for anything baking.  You can buy similar ones like this, or this, or this, depends on how much you want to spend.  Or just check out your local garage sales this upcoming spring and score an ultra cheap one like I did, probably only spend $1.00. Either way you are sure to bake up some delightful goodies!



Now onto the actual chocolate bundt recipe.  Its simple, yet absolutely delicious chocolate cake and the added ganache is so smooth.  Do not be afraid of the added coffee in the cake coffee really does intensify the chocolate flavor!  

A simple shortcut that I make with two of the ingredients in this recipe is DIY cake flour and buttermilk.  

For the cake flour: using your 1 cup measuring cup, add 2 tablespoons of cornstarch, then fill the rest of the 1 cup with flour.  

For Buttermilk: using your 1/2 cup measuring cup, add 1 tablespoons of vinegar, then fill the rest of the 1 cup with milk, let sit for 5-10 minutes.  

Whola your homemade, and cheap DIY cake flour and buttermilk!

Yellow cupcakes with chocolate frosting


Yellow cupcakes are by far my most favorite cupcake.  As a kid I did not like chocolate cupcakes or chocolate cake, they had a weird taste to me.  So many times I would not eat the cake at birthday parties or events because of this.  I blamed it on that I didn’t like cake but in reality I did not like chocolate cake. I was always on cloud nine when a party had a yellow cake or cupcake, the taste was just more sweet to me.  Even though I have grown out of my not liking chocolate cake, I still prefer a yellow cake over any other.

So I paired this amazing, yummy basic yellow cupcake with a rich creamy, smooth chocolate frosting.  These particular cupcakes were for my youngest sons birthday party, I always seem to have a baseball theme for him.  The baseball looking thing on top is 1/2 of a carefully cut oreo and red gel to make the stripes.

Oreo Chocolate Cupcakes

Personally you can never go wrong with OREO’s.  There is something simply magical about the chocolate sandwich cookie with the cream center.  How do you eat yours?  As I kid, I definitely dunked it until it was soaked…like just before mushy soaked.  Then it almost melted in my mouth.  In my teen years, I liked to twist, lick the cream filling and then eat the chocolate cookies last.  Now as an adult I just eat it whole, and with a side of almond milk.

So I loved when my youngest son picked out these cupcakes for his birthday party.  They are great pair of chocolate cupcake with vanilla oreo frosting.

Cookie Monster Cake


My husband just might be the human cookie monster, for his love of anything sweet but especially homemade chocolate chip cookies.  So when this commercial came out, he laughed, watched and then said “I love cookie monster”.   This commercial is adorable but it is totally my hubby when waiting for the cookie—IMPATIENT! So for his love of Cookie Monster, love of chocolate chip cookie, love of cake, love of sweets: this cake is just for him.

Don’t be alarmed by the ingredient list.  It is actually quite simple to put together.

  1. make the cake and let it cool

  2. make the cookies dough frosting, assemble the cake, put in refriderator.

  3. make cookies and cream frosting, frost entire cake

  4. make ganache, pour over cake

  5. make eyes

  6. ENJOY, because it is a delicious cake:)

Peanut Butter & Chocolate Chip Cookie Cake


Well a week later I am finally getting this amazing recipe on the blog, wow what a week.  So lets begin another with this excellent recipe.  You can’t go wrong with a recipe when it includes Peanut Butter Chips, Chocolate Chips and M & M’s.   Plus the cookie base is a PEANUT BUTTER cookie.  This cookie cake is a tasty twist to both cookies and a cake.


So upon looking for a unique twist to the traditional cupcakes or cake for my Father-in-laws birthday, my kids and I remember how much grandpa loved our cast iron skillet chocolate chip cookie.  So with the same thing in mind we searched for a something similar, not knowing what we would come up with.  We narrowed it down to two and ended with this recipe, I am sure at some point I will make the other one.  To put my own twist on the cookie cake I used baking mini m & m’s, mini chocolate chips and peanut butter chips all baked in a 10 inch spring form pan.  The end result is a gooey goodness!

Happy Birthday to ME!


And another one bites the dust…..really it is just another day in the life of me.  Waking up early to enjoy coffee, search the net a few minutes then a easy 3 mile run.  Only to come home to sweet birthday wishes, hugs and kisses from my children and husband.  I enjoyed morning t-ball and softball, lunch with my family, swimming, short nap, made supper, then off to a town team baseball game.  All in all it was the birthday for me.


I always make birthday cakes or cupcakes for friends and family so my birthday is no exception.  Since my birthday is in the heat of summer I like to keep the cake light even though I LOVE chocolate and peanut butter.  I will have to celebrate my half birthday in January to have that cake.  So this year I choose my favorite cupcakes,  HOMEMADE FUNFETTI CUPCAKES, made into a square layered cake.


I have never used my 8 x 8 inch square pan so I did some work on google and found to to be similar volume as your standard 9 inch round baking pan.  This is a helpful link to different Pan sizes and an 8 x 8 square pan similar to mine.



This cake is fun and delicious.  A wonderful vanilla base with sweet whipped vanilla buttercream frosting and sprinkles for added fun.
