Gluten and Dairy Free Cupcakes

I love a baking challenge.  So when I planned to make cupcakes for the hockey team and parents, I knew I needed to make a gluten AND dairy free cupcake.  I was ok with the gluten free cupcake, because I was using a box mix but the dairy free frosting was something I was very unsure of.  Plus I wanted it to look as BEAUTIFUL as the other cupcakes and nobody should be left out because of their food allergies.

I was stoked when I found this box mix in our local grocery store because I only needed to add eggs, oil and water. Although this mix says it contains milk, I sent a pic of the ingredients to the parent, they said it would be ok.  Now on to the frosting.  I really wanted something that could be piped, so I needed something close to a buttercream but only dairy free.  I tossed between a few recipes and ended with this one, Dairy Free Buttercream.  The end result is a cupcake that looks no different from the regular ones.

**If you do not like coconut, you will not like this frosting because of the use of coconut oil.  HOWEVER, if you do like coconut or coconut flavor, these cupcakes are perfect for you even if you do not have a dairy allergy.

White Chocolate Funfetti Blondies

IMG_9869Do you every have a recipe in mind skim read it, buy the ingredients, then come to find out the recipe makes a much smaller serving than what you needed therefore you do not have enough ingredients?  Well this happened to me when I wanted to make these Cake Bater Blondies, which calls for an 11×7 pan.  I needed a minimum of a 9 x 13 pan, I was baking for hungry hockey players after all.  So off to the internet I go in search of something, but I did not have to look far.  Just searching around Sally Baking Addition I found this recipe, Candy Bar Blondies .

I knew I could easily double it and instead of the addition of the candy bars I substituted the sprinkles and white chocolate chips from the recipe I wanted to originally make. They were a great hit for the boys!

Celebrating Dr. Seuss’s Birthday Day

Love those dress up days for my elementary kiddos, especially Dr. Seuss birthday.  Our elementary school goes all out, the  kids and staff dress up, decorating the halls, and of course reading the fun silly Dr. Seuss books .  Of course for me it turns into a DIY project with the kids, searching the house for what we have before we head to the store.  The kids decided on their own what characters they would like to be.  My second grade girl has been Cindy LooHoo and Daisy Head Maisy, this year she settled on Sally Sue from Cat in the Hat.  My youngest who is in Kindergarten has seen this big sister costumes the last two years so I was super excited when he wanted to partake.  At first discussion we thought they would be a couple and he could go as the boy from Cat in the Hat, but he decided on his own to be Sam I am from Green Eggs and Ham

The only out-of-pocket expense for us was the blue tank top for Sally’s dress, 3.89 at Wal-Mart.  Otherwise all else was used from old t-shirts and fabric scraps from my craft stash.  I used several site to pull it all together.
